While Crossbuck BBQ is a Texas based barbecue restaurant, we are the Crossroads of American Barbecue. We are trying to hit on the best parts of what we think is the best BBQ from around the country and then put our own twist on them.
Our Approach
We're taking some traditional barbecue thoughts and recipes and trying harder. Basically, we are "cheffing them up" and making them our own while still trying to respect the traditions of all the people who came before us.
Smoked Brisket
Crossbuck's Gold Standard, original recipe, Texas-style brisket. Aged for 45 days, seasoned for 1 and smoked for 12-18 hours over our special blend of smoke.
Brisket Candy™ Burnt Ends
We took this Kansas City classic and made it our own - candying our Gold Standard brisket with a blend of sugar, spices and Texas's own Shiner Bock beer.
Smoked Sausage
Crossbuck's house-recipe Texas-style sausage made from FRESH ground beef and pork with smoked poblano peppers and fresh spices in an all-natural casing.
St. Louis Style Pork Ribs
Chef-pitmaster Tim combines the best of Memphis, KC and Texas in a St. Louis style rib for Crossbuck's one-of-a-kind creation - seasoned and gently sauced with a bite.
Black Molasses Pulled Pork
Inspired by the Carolina's, Crossbuck's pulled pork features a spritz of "Mexican Coca-Cola" and balsamic with a unique Asian-inspired, char siu sauce.
Smoked Prime Rib
Crossbuck's prime rib is marinated in bacon fat with a blend of sage, rosemary and thyme before being seared and smoked to a beautiful medium rare. Available All Fridays, Featured Other Days
Brass Collar Smoked Turkey
A fresh, beautiful, extra-large turkey breast brined in celery extract, seasoned with a savory herb blend and then smoked for hours over oak, hickory and fruit wood.
Smoked Citrus Glazed Salmon
We start with a whole, fresh Atlantic salmon, season it with our freshly-ground citrus zest (house-made from dehydrated lemon and lime), then gently smoke it to perfection. Available All Sundays, Featured Other Days
Soy Smoked Chicken
Juicy, dark meat, leg quarters marinated for 24 hours in a blend of soy, pickled ginger and olive oil and then transformed through the Crossbuck smoking process.
