Background
In speaking with Tim, he points out that one of the problems with teaching people how to smoke a Central Texas style brisket...or any style of brisket for that matter...is that smoking meat - like most aspects of cooking - is not a scientific process. While one can try to hold as many variables as constant as possible, doing so is impossible. Every brisket is unique, every log is different, each day's weather varies, etc.
