Based on the recipe for traditional brisket burnt ends, Crossbuck BBQ’s famed Texas pitmasters, Tim McLaughlin and Damian Avila took this Kansas City creation and gave it a Texas twist…one that made it perfect for Valentine’s Day.
The duo started with Crossbuck’s authentic Central Texas style brisket, smoked low ‘n slow in wood-fired smokers…the brisket famous for its “sugar-cookie” bark. Before its done cooking, they slice off and cube the fatty point of the brisket to ensure each piece has some of this delectable bark. Then, they give it another Texas twist…replacing the traditional barbecue sauce of Kansas City burnt ends with a heavily-sugared spice rub featuring Texas’s own Shiner Bock beer.
In the smoker, Tim’s creation transforms into what he affectionately terms “Brisket Candy” - this perfect mixture of intense savory and intense sweet that effectively creates a “flavor explosion” in your mouth.
